This quick and easy gluten free banana bread is the perfect bake for lunchboxes. Full proof recipe, you’d never know it was gluten free.

For the best flavour banana bread make sure you use really ripe bananas with lots of spots on the outside. (The ones my kids will turn their noses up at when they see them in the fruit bowl!)

This is a great recipe to make with children. Get them to help with the weighing and measuring. Kids love to help mixing up the cake too. Just ensure caution is taken when placing in and taking out of the oven.

Is it Vegan?

This recipe is suitable for people following a gluten free diet and a vegan diet.

Do I need any specialist equipment?

No specialist equipment needed. If you don’t have a masher you can use a fork instead, just make sure your bananas are really ripe.

Don’t have a loaf tin? Swap for a high sided tray and bake a tray bake instead, just reduce the cooking time to about 35 minutes.

Prep Time: 5 minutes
Cook Time: 1 hour
Additional Time: 10 minutes
Total Time: 1 hour 15 minutes


  • 200g gluten free Self raising flour
  • 1/4 tsp Bicarbonate of soda
  • 75g baking margarine
  • 150g Caster sugar
  • 2 Eggs
  • 450g unpeeled Bananas


1.Preheat your oven to 180C, Fan 160C, Gas 4.
2.Grease a 2lb loaf tin.
3.Cream together the butter and sugar until pale & fluffy.
4.Mash the bananas into the mixture.
5.Add the eggs, a little at a time, alternately with a spoonful of the flour and beat well.
6.Stir in the remaining flour and bicarbonate of soda
7.Pour into your prepared tin & bake for one hour, or until a skewer, inserted into the centre, comes out clean.
8.Leave to cool for a few minutes, then turn out to cool completely.
