Almond biscuits (gluten free)

A good recipe if, like me you are left with a half opened bag of ground almonds after Christmas. They never keep, so a light crisp biscuit recipe is a great way to use them up. I hope you love my recipe for gluten free almond biscuits.

Cooking with Kids?

This is a great recipe to make with children. Get them to help with the weighing and measuring. Kids love to help forming the dough, rolling it out and cutting the biscuits. Just ensure caution is taken when placing in and taking out of the oven.

Is it Vegan?

This recipe is suitable for people following a gluten free diet and a vegan diet as long as the margarine you choose if free from milk.

Do I need any specialist equipment?

The only specialist equipment needed is a round cutter, but if you didn’t have one to hand. You could simply roll out the dough and cut into square shapes instead. Just watch the edges as this shape tend to burn a little quicker.

Almond Biscuits

Servings 36

Ingredients

  • 175 g Gluten free self raising flour
  • pinch salt
  • 75 g caster sugar
  • 50 g ground almonds
  • 150 g margarine
  • few drops of almond essence

Instructions

  1. Preheat the oven to 180c gas mark 4.
  2. Mix the dry ingredients together and rub in the margarine.
  3. Add the almond essence and mix well, bringing the dough together with your hands.
  4. The mixture may well be quite sticky, so flour the surface well before rolling out.
  5. Roll out thinly and cut 36 circles.
  6. Place onto two baking trays
  7. Bake for about 15 minutes until lightly brown on the edges.
