Easy Victoria Sponge (Gluten Free)
A light and fluffy tea time treat. This Gluten free Victoria sponge recipe is perfect with a cup of tea. Who said being gluten free meant that you had to miss out on cake?
If you find sometimes your sponge sinks slightly when it comes out of the oven, try leaving it in the oven turned off for 5 minutes with the door slightly open. I find this can really help.

Cooking with Kids?
This is a great recipe to make with children. Get them to help with the weighing and measuring. Kids love to help mixing up the cake too. Just ensure caution is taken when placing in and taking out of the oven.
Is it Vegan?
This recipe is suitable for people following a gluten free diet and vegetarians. The recipe could be adapted for a vegan diet, by substituting the margarine for vegan margarine. The replacing the eggs with either a flax seed egg or peanut butter could work too. I have a great egg replacement guide here. You could then substitute the cream for coconut cream.
Do I need any specialist equipment?
I like to use a mixer and an electric whisk for the cake making and whipping cream but they aren’t essential. You do however need to have the right size cake tins.
Easy Victoria Sponge (Gluten Free)
Ingredients
- 125 g soft margarine
- 125 g caster sugar
- 3 eggs
- 125 g Gluten free self raising flour I used Doves
- Pinch of baking powder
- 1 tbsp icing sugar
- 2 tbsp jam
- Half a pot of double cream whipped
- 6 strawberries sliced
Instructions
- Pre-heat oven to gas mark 4 / 180°C
- Grease and line 2, 7 inch sandwich tins.
- Place margarine, sugar, eggs flour and baking powder into mixing bowl
- Mix together with electric whisks. Mixture should become light and fluffy
- Divide between 2 baking tins.
- Bake for 25-30 minutes or until golden brown
- Turn onto a cooling rack and remove the grease proof paper and allow to cool.
- Spread jam over one of the sponge, then arrange the sliced strawberries on top.
- Spread the whipped cream over and sandwich them together
- Sprinkle with a little icing sugar
