Gluten Free Banana and walnut traybake

This Banana and walnut traybake recipe is great for serving up for lunchbox treats.

This is my adapted version of a banana loaf recipe. I love banana loaf but often find it can be a little too moist in the middle. Baking it as a traybake ensures it is fully baked through.

If you love walnut cake or banana loaf you’ll love the combination of both these flavours in this traybake.

Ingredients

  • 3 large or 4 medium, ripe bananas, mashed
  • 250g caster sugar
  • 125g unsalted butter
  • 2 medium eggs
  • 250g gluten free self raising flour
  • 120g walnut pieces, chopped

Equipment

  • Weighing scales
  • Masher
  • Food mixer
  • Jug
  • Sieve
  • knife
  • Chopping board
  • Oven gloves

Method

  1. Heat the oven to 190 c or gas mark 5 and grease and line a deep sided baking tray
  2. Cream the mashed bananas and sugar together in a mixer until fluffy
  3. Add the butter and beat until evenly combined
  4. Beat in the eggs, one at a time. Adding a spoonful of flour with each.
  5. Sift in the remaining flour, then carefully fold in.
  6. Fold in the walnut pieces.
  7. Spoon the mixture into the baking tray and bake for 30 minutes until golden brown.
