Vegetarian toad in the hole (gluten free)

There isn’t a better classic comfort food than a Toad in the hole. Make this quick and easy vegetarian toad in the hole recipe and no one will ever know it’s gluten free!

Not necessarily the prettiest looking dinner option, but it tastes so good. Perfect with mash potatoes, lots of steamed vegetables and gravy.

This is a great recipe to make with children. Get them to help with the weighing and measuring. Kids love to help mixing up the batter. Just ensure caution is taken when placing in and taking out of the oven. I would advise that an adult does this part as the oil can spit.

Is it Vegan?

This recipe is not suitable for people vegan diet as it uses eggs. I have yet to find a good replacement for eggs in this recipe.

Do I need any specialist equipment?

No specialist equipment needed just a high sided oven proof dish, so the batter doesn’t over flow.

Vegetarian toad in the hole (gluten free)

Ingredients

  • Six gluten free vegetarian sausages
  • 100g gluten free corn flour
  • 150ml milk
  • 3 medium eggs
  • 25ml vegetable oil
  • Pinch of salt

Instructions

  1. Preheat oven to 220oc or gas mark 7
  2. Arrange sausages spaced apart in ovenproof dish. Add oil and put in oven to heat up for 5 minutes
  3. Sieve flour into mixing bowl and add pinch of salt
  4. Make a well in the centre of the flour
  5. Put milk in measuring jug, crack eggs into jug and beat with fork
  6. Add milk and egg mixture into the centre of flour a little at a time and beat with whisk until smooth
  7. Remove dish from oven (the sausages should be sizzling)
  8. Quickly pour batter over top
  9. Return to oven immediately and bake for 30 mins.
  10. It should be golden brown and well risen when cooked.
