Saturday nights have become a bit of a regular curry night in the Cartwright house. But although I love this tradition, I do like to mix it up a bit. So we had a change from the usual kormas and rogan josh and opted for a gluten free thai green curry.

This simple Thai green curry is made with store cupboard and freezer ingredients. So it can be made at a moments notice. In just over half and hour you can have an impressive and tasty dish on the table. I do hope you love this weeks recipe.

Cooking with Kids?

This is a great recipe to make with children. Get them to help with the weighing and measuring. Older children can get involved with slicing the vegetables and stirring in the paste.

This recipe is suitable for people following a gluten free diet and vegetarians. If you can source the vegan quorn pieces this will make it suitable. Alternatively substitute for tofu cut into dice.

Ingredients

  • 1 red pepper
  • 150 g quorn chunks
  • 1 tbsp Thai green curry paste
  • 1 tin coconut milk
  • 50 g frozen peas

Instructions

  1. Slice the pepper, fry the quorn and the pepper for 5 minutes.
  2. Add the curry paste and cook for 2 minutes.
  3. Add the coconut milk and simmer for 20 minutes.
  4. Add the frozen peas and cook for a further 5 minutes.
  5. Serve with boiled rice.
