Easy Victoria Scones (Gluten Free)
A traditional English recipe and perfect for a beginner cook, or if you are like me baking with children. These Victoria scones will be a hit with everyone.
They are intended to be pulled apart at the scores. But we all just eat a massive scone instead!
Victoria scones are also sometimes called empire scones and are a cake baked to celebrate Queen Victoria’s coronation and Jubilee.
The scone is shaped into a round with a cross cut across the top. A glace cherry is placed in the center of each segment. To represent the jewels in her crown.

If you aren’t a fan of glace cherries, you could substitute them for dried cranberries, sultanas or small pieces of chopped apricot.
Cooking with kids?
This is a perfect recipe for cooking with kids. Get them involved by helping weight out the ingredients and rubbing in the mixture.
Take care when adding the liquid as fom experience I know children are likly to tip all the milk in, in one go. Resulting in something looking more like porridge.
Then get the kids to help shape and decorate the crowns.
Is it Vegan?
This recipe is suitable for people following a gluten free diet and vegetarians. The recipe could be adapted for a vegan diet, by substituting the margarine for vegan margarine.
Then replacing the eggs with either a flax seed egg or some apple sauce. Finally swap the milk for your variety of nut or soya milk. I have a great egg replacement guide here.
Do I need any specialist equipment?
The short answer is no you don’t need any specialist equipment for these easy Victoria scones. The only piece of equipment you may not have, is a pastry brush for brushing the beaten egg and milk glaze onto the tops of the scones.
These are really inexpensive and can be picked up in most supermarkets and online. You can get them in both natural bristle and silicone. I personally prefer a silicone brush.
