Gluten free cinnamon cake recipe

Cinnamon has got to be one of my favourite cooking smells and this easy homemade cinnamon cake never fails to deliver. Its so simple and you’d never know it was gluten free!

To make your own Cinnamon cake from scratch you’ll need:
Serves 8

Ingredients

  • 180g caster sugar
  • 75g butter
  • 2 eggs
  • 250g gluten free self raising flour
  • 2 tsp cinnamon
  • 200ml milk
  • Icing sugar to dust

Equipment

  • 20cm cake tin
  • Food processor
  • Weighing scales
  • Oven gloves
  • Cooling rack

Method

  1. Preheat the oven to 180c gas mark 4.
  2. Grease a 20cm cake tin
  3. In a food processor, cream the butter and sugar together until pale and fluffy.
  4. Add the eggs and beat.
  5. Add the flour, cinnamon and milk and mix until fully incorporated.
  6. Pour into the prepared cake tin.
  7. Bake for 45 minutes until the cake is just coming away from the sides of the tin.
  8. Remove from the oven, allow to cool for 5 minutes, then remove from the tin.
  9. Cool on a wire rack.
  10. When serving dust with icing sugar.
