Healthy Chocolate muffins (Gluten Free)

These healthy chocolate muffins are a great recipe for getting some extra vegetables into your children. The chocolate taste hides the courgette (zucchini) and they are wonderfully light and moist.

I love muffins for breakfast, they make a great option when you have busy mornings. Plus kids love them.

Cooking with Kids?

This is a great recipe to make with children. Get them to help with the weighing and measuring. Kids love to help grating the courgette (Zucchini) and mixing up the cake too. Just ensure caution is taken when placing in and taking out of the oven.

Make sure it’s gluten free?

Be sure to check the cocoa powder is gluten free, as they are sometimes bulked out with flour. Also make sure it’s cocoa powder and not drinking chocolate powder as that has milk and sugar added to it.

Is it Vegan?

This recipe is suitable for people following a gluten free diet and vegetarians. The recipe could be adapted for a vegan diet, by substituting the margarine for vegan margarine. The replacing the eggs with either a flax seed egg or peanut butter could work too. I have a great egg replacement guide here.

Do I need any specialist equipment?

No specialist equipment needed for this easy recipe. If you don’t have muffin paper cases. You can substitute for squares of grease proof paper as I’ve done. Or simply spray the tin with a little oil to grease.

Healthy Chocolate Muffins

Ingredients

  • 225g grated courgette
  • 175g gluten free self raising flour
  • 25g gluten free cocoa powder
  • 1 egg
  • 100g margarine
  • 75g sugar
  • 180c gas mark 4
  • 12 muffin cases

Instructions

  1. Cream the margarine and sugar together until light and fluffy
  2. Beat in the beat and grated courgette
  3. Sieve the flour and cocoa powder and lightly fold into the mixture
  4. Divide into muffin cases and bake for 20 mins until they spring back to the touch.
