Ultimate chocolate chip cookies (Vegan + Gluten Free)

I’m really pleased to have created these Ultimate chocolate chip cookies which are Vegan and Gluten Free. They keep me, my kids and my tummy happy.

When you were young what was your favourite snack when you got home from school? Did you dive for the flapjack or head straight for the Chocolate Brownies? Usually these things didn’t hand around for long in our home but my favourite by far were cookies followed by a glass of milk or a cup of tea. These days all my favorite childhood treats would make me very unwell. So I’ve adapted and tweaked as I’ve learnt more and more about what my body is happy for me to eat.

This recipe make 30 cookies.

To make my ultimate vegan and gluten free chocolate chip cookies you will need

Ingredients

  • 200g gluten free plain flour
  • 100g ground almonds
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 150g vegan margarine
  • 125g caster sugar
  • 125g soft brown sugar
  • 1 tbsp ground flax seed mixed with 1 tbsp water
  • 1 tsp vanilla extract
  • 200g vegan chocolate chips

Method

  1. Preheat the oven to 180c / gas mark 4
  2. Cream the margarine and sugars in a large mixing bowl. Add the flax seed and vanilla and mix well.
  3. Add the flour, almonds, baking powder and salt and mixture until fully combined.
  4. Stir in the chocolate chips.
  5. Chill the mixture for 10 minutes.
  6. Use an ice cream scoop to place scoops of the mixture on lined baking sheets. Leave room to spread.
  7. Bake for 12 minutes.
  8. Remove from the oven and allow to cool.
