If you are like me and a big fan of peanut butter. You’ll love these cookies. If you can resist just eating it straight from the jar, these cookies are quick and simple to whip up and make a good batch size of 24!

I will admit after cake, cookies are my favourite thing to make at home. Plus the kids love a sweet treat, so we are on to a winner.

These peanut butter cookies are crunchy, crumbly and not too sweet. Perfect with an afternoon cuppa.

Be sure to check your peanut butter before using. Some cheaper versions are thickened with flour, plus I like to choose ones that don’t use palm oil in them.

Cooking with Kids?

This is a great recipe to make with children. Get them to help with the weighing and measuring.

Kids love to help mixing up the cookie mix and pressing the fork in to make the patterned tops too. Just ensure caution is taken when placing in and taking out of the oven.

Is it Vegan?

This recipe is suitable for people following a gluten free diet and vegetarians. The recipe could be adapted for a vegan diet, by substituting the margarine for vegan margarine.

The replacing the eggs with either a flax seed egg or just leave the peanut butter to bind it. I have a great egg replacement guide here.

Do I need any specialist equipment?

No specialist equipment is required for these cookies. Just a basic set of kitchen utensils and two baking sheets needed!

Peanut Butter Cookies

Peanut Butter Cookies

Prep Time: 35 minutes
Cook Time: 15 minutes
Total Time: 50 minutes

Ingredients

  • 140 g self raising flour
  • 115 g margarine
  • 165 g caster sugar
  • 1 egg
  • 1 tsp vanilla extract
  • 265 g crunchy peanut butter.

Instructions

  1. Cream the margarine and sugar together.
  2. Gradually mix in the beaten eggs and the vanilla.
  3. Stir in the peanut butter.
  4. Stir in the flour.
  5. Refrigerate for 30 minutes until firm
  6. Preheat the oven to 180c gas mark 4 and grease two baking trays.
  7. Roll out teaspoonfuls of the dough into balls and place on the baking trays.
  8. Flatten with a fork.
  9. Bake for 12-15 minutes.
  10. Transfer to a rack to completely cool.
