Banana scones recipe (gluten free and vegan)
These banana scones are the perfect lunchtime treat. Great for packed lunches or quick snacks. You can eat them warm or cold.
This small batch recipe is perfect for using up a black banana.

Ingredients
- 225g gluten free self raising flour
- 1 tsp baking powder (check it’s gluten free)
- 1/2 tsp ground cinnamon
- 50g vegan butter, chopped into pieces
- 2 tbsp caster sugar
- 100ml oat milk (or any vegan milk of your choice)
- 1 large ripe banana
- Preheat your oven to 180c gas mark 4
- Add flour, baking powder and cinnamon to your mixing bowl
- Rub in your butter until you have a breadcrumb consistancy
- Stir in your sugar
- Mash in your banana
- Pour in your milk stirring slowly with a knife until it forms a dough
- Form into a ball with your hands and place on a floured surface
- Press out to roughly an inch thick and cut out the scones with a fluted 2.5 inch cutter. (If you dont have a cutter a glass will work)
- You should get four to 6 scones depending on your cutter size.
- Place on a lined baking tray and brush with a little extra milk.
- Bake for 14-16 minutes until golden brown.
- Serve warm with vegan butter.
If you want to keep the banana scones, they will keep for up to three days in an airtight container.
