Cinnamon crab apple jelly recipe (gluten free)

Cinnamon Crab apple jelly has got to be one of the easiest recipes to make if you are new to jam making. As the crab apples are high in pectin meaning it will set easily. Strained from a jelly jam this clear preserve is one of the most beautiful rose coloured things to grace my breakfast table.

To make the cinnamon crab apple jelly you will need:

Ingredients

  • 2kg crab apples
  • 2 sticks of cinnamon
  • around 900g granulated sugar

Plus you will also need 7-8 225g jars and a jelly bag

Method

  1. Wash your crab apples and remove stalks
  2. Cut them in half. No need to peel or core.
  3. Place in a large heavy bottomed pan. A jam pan is ideal but a large saucepan will also work.
  4. Add 1.2 litres of water and the cinnamon sticks.
  5. Simmer gently until the crab apples are soft and collapsing. You can mash them here if you want.
  6. Remove from the heat and allow to cool slightly before tipping the crab apple mash and liquid through your jelly bag.
  7. You need to hang this up and allow it to drip into a large bowl. Ideally overnight, but at least until it has stopped dripping. (Do not be tempted to squeeze the bag, as you will get cloudy jelly)
  8. Once it has dripped through, you need to measure the liquid you have got. for every 100ml of liquid you will need 75g of sugar. So if you have 1.2 litres of liquid you would need 900g of sugar.
  9. Put your juice back into you cleaned jam pan and heat it slowly to the boil.
  10. Add the suagr and stir until it is all disolved.
  11. Boil for 10 minutes or until setting point is reached. You can test it is set by placing a small blob on a chilled saucer and pushing it will your finger. If it wrinkles up it’s at setting point.
  12. Remove the scum from the top of your jelly with a wooden spoon and pour the hot jelly into *sterilized jars and seal.

To sterilize your jars, I wash mine in hot water and rinse, then place the jars and metal lids onto a baking jar in a low oven until I need them.

Alternatives crab apple jelly flavours to try

You can experiment with the spices you put in. Try adding a mulling ball, pumpkin spice mix in a muslin cloth or some slices of fresh ginger when cooking the apples.
