Tomato and Basil salad (gluten free)

Salads don’t come much tastier or satisfying than this gluten free tomato and basil salad. Perfect to serve with pasta, bbq food or even on its own with a chunk of feta and bread.

This is a great recipe to make with children. Get them to help with the weighing and measuring. Kids love to help mixing up the salad. If you think red onion is too strong for them, try substituting with salad onions.

Do I need any specialist equipment?

No specialist equipment needed for this quick and easy salad recipe. Just a sharp knife and a large bowl.

  • 6 tomatoes (peeled) cut into wedges
  • 25 g sun-dried tomatoes drained and thinly sliced
  • 1 medium red onion peeled and thinly sliced
  • fresh basil a few leaves
  • Balsamic vinegar
  • 4 tablespoons chopped fresh basil
  • 2 tablespoons sundried tomato oil
  • Black pepper

Cut the tomatoes in to wedges

Peel the red onion and dice

Drain the sundried tomatoes and keep the oil

Slice the sundried tomatoes

  • Put all the prepared salad ingredients in a large bowl or on a large plate.
  • Shred the fresh basil
  • Pour the balsamic vinegear and oil, toss the salad
  • Add the fresh basil and pepper to serve
