Really pushed for time? Opt for a no yeast, traditional Irish soda bread recipe. I’ve adapted it to be gluten free and it’s the best quick and easy bread recipe I know.

Easy Irish Soda Bread (Gluten Free)

Prep Time: 10 minutes
Cook Time: 25 minutes
Total Time: 35 minutes

Ingredients

  • 450g gluten free plain flour
  • 1 1/2 tsp Bicarbonate of soda
  • 1 tsp xanthum gum (omit if your flour already has it)
  • 1/4 tsp salt
  • 2tbsp sunflower oil
  • 225ml milk (or dairy free alternative)

Instructions

  1. Preheat the oven to 200c / gas mark 4. Brush baking tray with a little oil.
  2. Sift the flour, soda, xanthum gum and salt into a bowl and make a well in the center.
  3. Mix the oil and milk and add to the flour. Mix until combined to a soft dough.
  4. Turn out onto the baking tray and shape into a round. Flatten, and cut a deep cross.
  5. To finish either brush with milk for a shine or dust with a little extra flour.
  6. Bake for 25 minutes. Test it is baked all the way through by tapping the bottom and listening for a hollow sound.

Notes

Best eaten straight from the oven.
