Apple Cinnamon Muffins (Gluten Free)
Apple cinnamon muffins are a delicious treat that can be enjoyed by everyone, regardless of dietary restrictions. With this recipe, you can make gluten-free muffins that are just as tasty and fluffy as the traditional version. All you need is some apples, cinnamon, and a few other ingredients to get started. So let’s get baking!

I love to bake muffins. I love all the rich scents and flavours that come from fruits, spices and dark sugars. So I thought I’d share one of my favourite quick and easy recipes today. These gluten free apple and cinnamon muffins are deliciously moreish and are great warm or cold.
Cooking with Kids?
This is a great recipe to make with children. Get them to help with the weighing and measuring. Kids love to help mixing up the muffins too. Just ensure caution is taken when placing in and taking out of the oven.
Is it Vegan?
This recipe is suitable for people following a gluten free diet and vegetarians. The recipe could be adapted for a vegan diet, by substituting the margarine for vegan margarine. The replacing the eggs with either a flax seed egg or peanut butter could work too. I have a great egg replacement guide here.
Do I need any specialist equipment?
No specialist equipment needed, but I do recommend using the silicone muffin cases. The cakes come out of these really easily and they are reuse able. If you don’t have these regular paper cases or squares of grease proof paper cut out and placed in the muffin tin will work just as well.

Apple Cinnamon Muffins
Ingredients
- 55ml Sunflower oil
- 1 egg
- 100g caster sugar
- 125ml Apple juice
- 140g Gluten free plain flour
- 1 tsp. Gluten free baking powder
- 1/2 tsp. Gluten free bicarbonate of Soda
- 2 tsp. ground Cinnamon
- 3 dessert apples
- icing sugar for dusting
Instructions
- Preheat the oven to 180c / gas mark 4.
- Whisk the egg. Then add the apple juice, oil and sugar and whisk to combine.
- Core the apples and chop into small pieces.
- In a large mixing bowl, sift the four, baking powder, bicarbonate of soda and cinnamon.
- Make a well in the centre of the dry ingredients and pour in the egg mixture. Stir until just blended.
- Add in the apple pieces.
- Fill 12 silicone baking cases sat on a baking tray.
- Bake for 25 minutes until the tops spring bake when touched.
- Transfer to a cooling rack.
- Dust with icing sugar to serve.
